These days, we could probably all use a little spice in our life. After rigorous recipe testing in the Wonderlab, we figured out the best way to spice up our life and it was too good not to share.
Enter the "Banana Cinnamon Date Snickerdoodle Sandwich".
These ice cream sandwiches really have it all. They are sweet, spicy, chewy and creamy and really simple to make. We combined our favorite snickerdoodle from Renewal Mill with our Banana Cinnamon Date gelato to make an Earth-friendly treat which also happens to be fully plant-based, vegan and dairy free! The snickerdoodles from our friends at Renewal Mill use upcycled and organic ingredients, along with heirloom cinnamon from Burlap & Barrel, which is also featured in the Banana Cinnamon Date gelato. They are truly a match made in dessert heaven!
How to make these game changing ice cream sandwiches.
2: Prepare cookies according to directions. Use an ice cream scoop to create cookies that are about 2 in. in diameter.
3: Let cookies cool completely. If they aren't cooled fully you may have a total ice cream sandwich melt down.
4: Pull gelato from the freezer and let sit for 3-5 minutes so it is scoopable. While you wait lay cookies bottoms up on a cookie tray.
5: Using your ice cream scoop, gently place a scoop on top of a cookie, then place the other cookie on top and press down gently to make sure the ice cream fills out the cookie.
6: Enjoy! These also keep well in the freezer for a few weeks if they are wrapped well!
